Our mochi is made using a steaming and pounding method. The raw materials, such as rice flour and mugwort, are placed together in a steaming machine and kneaded while being steamed to create the dough. Unlike mochi made with glutinous rice flour, the dough has a pleasant chewiness. The finished dough is then pounded with a pestle in a mochi-making machine.
The dough and red bean paste made with Hokkaido-grown adzuki beans are placed in a machine called a wrapping machine and wrapped, then each one is hand-wrapped in a beautifully colored fresh bamboo leaf, and finally steamed to finish.
